Koji are intended for the preparation of mash without the use of enzymes from malt, cereals, flour, wheat and other starchy raw materials. Yeast works in the cold saccharification method.
The dosage recommended by the manufacturer is 6-7 grams per kg. raw materials.
Koji Mellow (Mallow) differ from koji Angel (Angel) in that the resulting distillate comes out a little stronger and better in flavor and aroma.
