A CCT, or cylindrical-conical tank, is a container used to ferment beer. It has a cone shape with a rounded bottom, which makes it easier to collect yeast sediment. CCTs are usually made of stainless steel or plastic.

CCTs are used in both industrial brewing and home brewing .

In industrial brewing:

  • Large breweries:  use stainless steel CCT with a volume of 1000 to 3500 hectoliters.
  • Medium and small breweries:  also use CCT, but in smaller sizes.

Advantages of using CCT in home brewing:

  • Easy to clean and disinfect.
  • Provides better control of fermentation temperature.
  • Produces beer with a cleaner taste.
  • Can be used for re-fermentation of beer.
  • Allows you to save space.

Here are some tips for using CCT in home brewing:

  • Select the appropriate size CCT.  For home brewing, CCTs with a volume of 20 to 60 liters are usually used.
  • Clean and disinfect the CCT before use.
  • Fill the CCT with wort at the desired temperature.
  • Add yeast to the wort and let the beer ferment for the desired time.
  • After fermentation, transfer the beer to another container for post-fermentation.
  • Clean and disinfect the CCT after each use.

Additional tips:

  • Use a thermometer to monitor fermentation temperature.
  • Take a sample of the beer during fermentation to check its taste and aroma.
  • Be careful when pumping the beer to avoid agitating the yeast sediment.

Using a CCT may seem complicated, but it really isn't. With a little practice, you can easily use CCT to brew delicious beer.
