Alcotec 24 Extra Klar is a professional product consisting of two active ingredients that quickly and efficiently cleans wine and home brew. Packed in a special bag designed for 100 liters of wine or 50 liters of mash.

 

To obtain a better drink, it is necessary to purify not only the finished distillate, but also the wort before distillation. The fact is that the mash contains particles of “dead” yeast and other dense suspensions, the removal of which significantly improves the quality of the final product. Indeed, when heated, this yeast sediment forms compounds with an unpleasant odor, which can also spoil the taste of alcohol. These yeast fermentation products are very small, and it will not be possible to get rid of them with the help of ordinary straining.

 

Therefore, clarification of the mash significantly improves the quality of the drink. So, let's start in order. Before clarification, the fermented wort must be carefully drained from the yeast residue into a sterile container. And to carry out the process of degassing, i.e. remove carbon dioxide from the mash. Degassing minimizes the active formation of foam when the mash is heated. It is possible to remove carbon dioxide from the mash by thoroughly mixing the mash for 2-8 hours.

 

After degassing, pour the contents of package “A” into the wash, mix thoroughly and leave to settle for 2 hours. The package "A" contains the silicic acid sol, it is responsible for the clarification of the wort, i.e. removes yeast fermentation residues and impurities that make the mash cloudy, thereby improving the quality of the future drink.

 

After a 2-hour interval, add the contents of the "B" bag, which contains chitosan. This is an active substance that settles all the small products of fermentation to the bottom. Reacting with yeast residues, chitosan binds them into colloidal compounds, which are gradually deposited on the bottom. Stir the mash gently, being careful not to touch the sediment. Leave to settle for 24-48 hours until completely clarified.

 

It is most optimal if the container is settled in a cool place. At the end of the settling period, it is necessary to drain the liquid from the sediment. Now your wort is ready for further distillation and will give a delicious result.
